Real Simple has posted an interesting article titled "Skip that Step: Recipe Shortcuts". It takes a look at some common tasks in recipes and tells you their purpose. It then discusses if there are quicker and easier ways to accomplish the same thing.
One great example from the article is draining yogurt to thicken it. I have a few recipes for thick dips that call for this. It is always a pain because you have to plain ahead and drain the yogurt the night before. If you forgot, then you are stuck with runny tzatzkiki sauce or veggie dip. Real Simple's tip is to lay down some paper towels (they suggest 2 layers, but I'd do 3) and spread the yogurt over the towels in a thin layer. The paper towels will absorb a lot of the moisture in only about 15 minutes. Now why hadn't I thought of that! Photo by Mom the Barbarian
