I've always made my waffles from Bisquick or some other mix. I would sometimes add some cinnamon and/or nutmeg to the batter to make them more gourmet. They turn out good, but nothing amazing. Everything changed this morning when I tried out a new recipe my sister sent me.
These waffles are completely from scratch, but still simple to make. They are full of whole grains so they have a little health benefit. But best of all, they taste amazing. This is now my de-facto waffle recipe. No more shall I turn to the bland Bisquick.
Ingredients
- 1 1/4 cups of flour
- 3/4 cups plain oats (I use 1-minute Quaker Oats)
- 1/4 cup light brown sugar
- 2 Tbsp. of wheat germ
- 4 tsp. of baking powder
- 1 teaspoon of ground cinnamon
- Pinch of freshly grated nutmeg
- Pinch of salt
- 2 eggs
- 1 1/2 cups of milk
- 1/4 cup melted butter
- 1/4 cup oil (vegetable, peanut, canola, whatever)
Directions
Mix the flour, oats, brown sugar, wheat germ, baking powder, cinnamon, nutmeg, and salt in a bowl. Ensure that you do not have large lumps of brown sugar in the mix. Whisk the eggs, milk, butter, and oil in a separate bowl. Combine wet and dry ingredients and stir. You do not want to over-mix the batter; stir until just combined. The batter will be lumpy.
Use the batter with your waffle iron according to its directions.
Tips
- I found wheat germ on the cereal aisle of my grocery store.
- If you don't know how much batter to add to your waffle iron, try starting with 1/3 cup. From that first waffle you can decide if you should bump it up to 1/2 cup or down to a 1/4.
- These waffles freeze well and can be reheated in the toaster for a healthier alternative to those store bought frozen waffles.
