This is a healthy spread chocked full of veggies that tastes like heaven. Eat it with tortilla chips, pita crisps, bread, on a sandwich, or straight up. Pure deliciousness!
Ingredients
- 1 eggplant
- 1 red onion
- 2 garlic cloves
- 2 red bell peppers (other colors are fine, but the red makes for a pretty end result)
- 3 Tbsp. extra virgin olive oil
- 1/2 tsp. black pepper
- 1 1/2 tsp. salt
- 1 Tbsp. tomato paste
Directions
Preheat oven to 400 degrees. Peel the eggplant and seed the bell pepper. Dice the eggplant, onion, and bell peppers into 1 inch pieces. Mince the garlic. Mix the vegetables, garlic, olive oil, salt, and pepper in bowl until thing is well coated. Spread mixture out on a cookie sheet and cook for 45 minutes.After removing from oven, place the vegetable mixture and tomato paste in a food processor. Pulse until it is at desired consistency. I like it still a little chunky but make it as smooth as you like.
