Grilled Lemon Chicken PDF Print E-mail

This is a simple marinade for chicken that is perfect for summer.  It has a very light flavor with a wonderful punch of lemon.  

Ingredients

  • 1 lb boneless,skinless chicken breasts
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 Tbsp fresh thyme, minced
  • 1 tsp salt
  • 1/2tsp pepper

Directions

Mix the lemon juice, olive oil, thyme, salt, and pepper to create the marinade.  Add the chicken to the marinade and refrigerate for at least 3 hours or overnight.  Flip the chicken halfway through the marinating time.  Grill chicken using your favorite method - charcoal/gas, indoor/outdoor, etc.

 Tips:

  • When ready to grill the chicken, remove from marinade and pat dry with paper towels.  Patting the chicken dry will ensure that it grills and does not steam.
  • Make the marinade in a plastic ziploc bag.  You can pour all the ingredients in it, seal, and shake.  Then you add the chicken to marinate.  This makes it easy to flip the chicken - just flip the bag.  Plus, you don't dirty as many dishes.
