Lemon Yogurt Blueberry Pancakes PDF Print E-mail

I had these pancakes in Oregon when I visited last year.  I've been trying to recreate them since.  I think I finally got it.  They are so yummy!  Light from the yogurt, a bite from the lemon, and the pop of a blueberry - just delicious :)

Ingredients
  • 1 egg
  • 1/2 cup lemon yogurt
  • 1/2 cup milk
  • 2 tablespoon oil
  • 1 tablespoon sugar
  • 1/2 teaspoon nutmeg
  • 1 lemon (for zest and juice)
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • handful of blueberries (or as many as you like in your pancakes)

Directions

In a bowl, beat the egg, yogurt, milk, oil, sugar, nutmeg, zest of lemon, and juice from half the lemon.  In a separate bowl (or over parchment paper like I do), sift the flour, baking powder, and baking soda.  Add the dry ingredients to the wet ingredients and stir until just mixed.  The batter will be thick.  Stir in your blueberries.

At this point, you can make the pancakes on a griddle as you normally do.  To be more precise: Grease your griddle with a little butter and pour 1/4 cup of a batter on the hot griddle.  Cook the pancakes until they bubble then turn.

Makes about 8 pancakes.
