There is a little restaurant the husband and I love to eat at in Dallas called Dream Cafe.  One of our favorite dishes there is called the Global Dinner.  It is a bed rice covered in a black bean salsa, drizzled with sour cream, topped with a dollop of guacamole, and surrounded by tortilla chips.  A very healthy, but extremely yummy meal.  The other night I was inspired and decided to recreate the Global Dinner at home.  I think I did a damn good job!  

This is a great meal for anyone on a diet or who is vegetarian.  And I can see so many variations you can do with it.  I cant wait to make it again :)

For the rice:

  • 1 Tbsp olive oil
  • 1/4 cup onion finely chopped
  • 2 garlic cloves minced
  • 1 chicken bullion cube (leave out if you are vegetarian)
  • 1 cup brown rice
  • 2 3/4 cups water

Place the oil in a pot over medium heat.  Add the onion and cook until translucent.  Add the garlic and cook for a minute.  Add the brown rice, water, and bullion cube to the pot.  Bring to a boil.  Once boiling, cover the pot with a lid and turn down to a simmer.  Allow rice to simmer 45-50 minutes or until all water has been absorbed.  Remove pot from heat and let sit covered for 5-10 minutes.  Fluff rice with a fork.

For the black bean salsa:

  • 2 Tbsp olive oil
  • 1/2 onion finely chopped
  • 1/2 bell pepper finely chopped
  • 1 garlic clove minced
  • 1/2 Tbsp red pepper flakes
  • 2 small tomatoes seeded and chopped
  • 2 cans of black beans rinsed

Heat the olive oil over medium heat in a saute pan.  Add the onion and bell pepper and cook for 5 minutes.  Add the garlic, tomato, and red pepper flakes and cook for 1 minute.  Add the beans and tomatoes.  Cook the mixture until the the beans are heated through.

To Serve

Place a pile of the rice on a plate and top with the black bean salsa (amounts of each to your liking).

Serving Suggestions:

  • Drizzle sour cream over the top or just put a dollop in the middle.
  • Sprinkle with chopped avocado or fresh guacamole
  • Sprinkle with chopped cilantro
  • Serve with tortilla chips for an added crunch
  • Use tabasco or your favorite hot sauce to spice it up
