A big bowl of chili is perfect for a chilly night....or any night really. Throw out that seasoning mix from the store that is full of chemicals you can't pronounce. Instead, create your own spice mix for a delicious pot of chili.
Ingredients
- 2 Tbsp olive oil
- 2 medium onions, chopped
- 3 garlic cloves, minced
- 1 lb. ground turkey
- 2 10 oz. cans of tomatoes with green chilies
- 2 Tbsp chili powder
- 1/2 Tbsp cumin
- 1/2 Tbsp paprika
- 1/4 tsp cayenne pepper
- 1 tsp turmeric
- 1/2 tsp red pepper flakes
- 1 Tbsp salt
- 1 Tbsp tomato paste
- 1 can beef broth
- 3 Tbsp flour
- 1 can beans, rinsed
Directions
Heat olive oil in large pot over medium heat. Add onions and saute 10 minutes. Add garlic and ground turkey and cook until meat is browned. Mix in chili powder, cumin, paprika, cayenne pepper, turmeric, red pepper flakes, salt, and tomato paste. Cook for a minute to allow spices to come back to life. Pour in both cans of tomatoes and half the can of beef broth. Bring mixture to a simmer.
In a bowl or measuring cup, whisk the rest of the beef broth with the flour until no lumps remain. Pour this mixture and the beans into the pot. Bring chili back to simmer to allow flour to fully thicken. Simmer for another 10 minutes and then you are ready to serve.
I like to sprinkle green onion and cheese over the top of each bowl.
Tips
- Don't have beef broth in the pantry? Try a can of chicken or vegetable broth. Or just use 2 cups of water.
- For some extra flavor and heat, try adding a chile in adobo sauce that is finely chopped.
