I saw these herbed biscuits on Sara Moulton's show and I had to make them. They have turned out to be one of my favorites. I use them as a topping on my chicken pot pie and it adds great flavor.
Recipe from Gourmet Magazine (via Sara Moulton's show)
Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons minced herbs (I prefer rosemary)
- 1 1/4 cups heavy cream, plus additional for brushing biscuits
Directions
Preheat the over to 425. Sift the flour, baking powder, and salt into a bowl. Add the minced herbs and 1 1/4 cups heavy cream to the bowl. Stir until the dough just combines. It will be sticky and look like a mess, but you don't want to over combine because that will make tough biscuits.
Put the dough onto a lightly floured surface and knead the dough gently about 6 times. Pat it out to 1/2 inch thick. Cut out your biscuits with a knife or shaped cutter. The leftover dough can be gathered into a ball and patted out to cut out more biscuits. Brush the tops of the biscuits with the extra heavy cream and put in the oven. Bake them for 12 to 15 minutes until they are golden brown.
